Not so secret recipe - Lemon Sugar Cookies

Ingredients
50 mL butter or margarine* 1/4 cup
150 mL granulated sugar 2/3 cup
1 egg 1
25 mL lemon juice 2 tbsp
Grated rind of 2 lemons
300 mL all-purpose flour 1 1/4 cups
75 ml whole wheat flour 1/3 cup
2 mL baking soda 1/2 tsp
15 mL granulated sugar (for sprinkling) 1 tbsp

Preheat your oven to 350 F (180 C)

In a large bowl, cream margarine and sugar. You can use an electric mixer or if you have the guns for it, cream it yourself. Then add egg, beat it into that mixture. Then add the tbsp lemon juice, mix it in.

In a separate bowl, combine all-purpose flour, whole wheat flour, lemon rind and baking soda.

Stir into the wet mixture, mix well. Do this gradually and create your dough. Shape into balls and place them on the baking sheet about 5 cm (2 inches) apart. Then with the back of a fork, press them to 5mm (1/4 inch) thickness.

You can sprinkle sugar on top either before or after depending on preference.

BAKE ONLY FOR 10 MINUTES!!! OR THEY WILL BURN.

Take them out, let them rest for a bit on the baking sheet. They will firm up after cooling for a bit.
